It’s been a while since my last test but I think I came back with a good one today. I love salted caramels and have been on the lookout for a great cupcake recipe that included these flavors and finally found one. So A. and I got busy in the kitchen and A. got to wear her new little “cupcake” apron that her Auntie Becky gave her, which she loves!
These cupcakes take a little more work since you need to make caramel to put as filling in the cupcake and also for the frosting but I have to say it was worth the effort. I did lots of sampling to make sure I got it just right and I think they turned out yummy.
The recipe only made a small batch so I will make more if feedback is good on these. Hope you enjoy them!
the frosting was AMAZING. I could eat it by the spoonful. I would love these cupcakes in a bite size… as I know I just ate around 500 cal for breakfast
Very good but I’m glad I only ate half of one, b/c I feel a little … full … right now. The frosting was indeed good, much better than the usual boring frosting you find on “fancy” cupcakes from specialty cupcake shops. I liked how it was light and fluffy as opposed to dense and overpowering. Even though I didn’t taste the salt in the frosting, maybe that’s what made it so good.
Yum. 5 spoons for sure. Serving size is about 80% of current size though … waaaaayyyyy rich by the time I got to the last bite!
